Butterscotch "Gingerbread" Men Cookies


     Each year, the first Saturday in December, I host a Christmas cookie baking day with my mom and sister-in-laws. It has become a fun tradition and a great opportunity to hang out as women and bake!

     Last year I shared with you my all~time favorite Christmas cookie, the peppermint pinwheel. Every year we include this gem in our baking, but another yearly favorite is the butterscotch men. I'm not a huge fan of gingerbread but I love the look of those cute little guys. Years ago I stumbled upon this recipe somewhere and it called for butterscotch pudding as the flavoring. It became an instant hit! I will say it does have ginger in the recipe but I only add half of what it calls for so that the butterscotch is the predominant flavor.

     Here's the recipe:


3/4 cup butter, softened
3/4 packed brown sugar
1 pkg {4 serving size} butterscotch pudding
1 egg
2~1/4 cup flour
1 teaspoon baking soda
1~1/2 teaspoons ginger {half of what was originally called for}
1 teaspoon cinnamon



Beat the butter, sugar, dry pudding and egg in a large mixer on medium until well blended. Combine remaining ingredients and gradually add to pudding mixtures. Refrigerate dough {about 30 minutes}. 

Roll out your dough on a lightly floured surface about 1/4 inch thick and cut out your men.




Preheat oven to 350 degrees f. Put cut shapes on a greased pan and bake for 10-12 minutes until edges are lightly browned. Cool on wire racks. 

Next you can make a powdered sugar glaze to pipe his decor. {I just mixed about 2/3 cup of powdered sugar with about two tablespoons of milk to get my desired consistency. You don't want it to be too runny}. 
Use a piping bag with a small hole cut at the bottom to add eyes, bowties, buttons, trim and vests.





This recipe makes about 2~1/2 dozen men.
